Ingredients

  • 2 small red onions, 1 finely sliced, 1 diced
  • 3 limes, juiced
  • 1 red pepper, finely diced
  • 250g pack 10% fat lamb mince
  • 1 tbsp ginger paste
  • 1 tbsp medium curry powder
  • 1 tbsp garam masala
  • 1 tbsp ground turmeric
  • 1 tsp ground coriander
  • 75g gram flour
  • 1 egg
  • olive oil spray
  • 2 vine tomatoes, chopped
  • 10g fresh coriander, finely chopped
  • 10-pack mini brioche buns, split
  • 30g watercress

For the raita

  • 1 Granny Smith apple, grated
  • 3 tbsp coconut-flavoured yogurt

Method

  1. Preheat the oven to gas 6, 200°C, fan 180°C. Put the sliced onion in a bowl and cover with the juice of 2 limes; set aside to pickle.
  2. Put the diced onion, pepper, lamb mince, ginger paste, spices, gram flour and some seasoning in a bowl. Mix well, then crack in the egg and mix until fully combined
  3. Using slightly dampened hands, divide the mixture into 10 and roll into 10 flat patties, each weighing about 25g. Transfer to a lined baking tray, spray lightly with oil, 2 sprays per kabab, then bake for 15 mins or until cooked through.
  4. Meanwhile, mix the raita ingredients in a bowl with the remaining lime juice; season. Mix together the tomatoes and coriander in a separate bowl.
  5. Spread the brioche roll bases with the apple raita, then top with a cooked kabab, some chopped tomatoes, watercress and some pickled red onion before sandwiching with the bun lid to serve.
